This pan is made for baking sandwich-style toast and small loaves at home or in a small bakery. It is formed from carbon steel and finished with a gold-tone non-stick coating. The side walls have a corrugated texture, which helps heat travel more evenly around the loaf and gives the crust a regular pattern. A sliding lid sits on the rim so the loaf can rise into a square shape. Leave the lid off if you want a rounded top.

The steel body holds heat well and is rigid enough for repeated oven use. The non-stick coating reduces the amount of grease needed and makes turn-out easier once the bread has cooled slightly. Folded rims and riveted points on the base keep the box in shape when it is filled with dough. The lid can be shifted aside rather than lifted straight off, which is useful when the pan is hot.

Three pan sizes are available, plus matching pre-cut liners:

• 230 g rectangular pan with lid: lid 19 × 8.2 cm, height 9.6 cm, base about 17.2 × 8 cm
• 450 g rectangular pan with lid: lid 21 × 12 cm, height 11.4 cm, base about 19 × 10 cm

Use the 250 g pan for a compact square loaf, the 230 g pan for a narrow sandwich loaf, and the 450 g pan for a standard family loaf. The liners save washing time and help the loaf release cleanly. Check that your oven shelf can take the length of the 450 g pan before ordering that size.

Allow the pan to cool before washing. Hand-wash with a soft sponge and mild detergent. Avoid steel wool, sharp knives, and sudden temperature changes, which can wear the coating. Dry fully before storage. The pans nest, so they do not take much cupboard space.
