This mold is a straight U-shaped channel, open at both ends. It is made from carbon steel with a champagne-gold non-stick coating. The trough is 24 cm long, 4 cm wide, and 4 cm high. Dough is pressed into the channel so the baked piece comes out as a long bar that can be sliced after cooling.
The open ends make it possible to remove a long cookie or biscuit log without a separate lid or plunger. The non-stick coating helps the dough release, though a thin layer of butter or a strip of parchment is still useful for sticky fruit doughs such as cranberry cookie dough. Carbon steel gives the mold enough stiffness that the walls do not spread when filled.
The size is suited to a single bar rather than a full sheet of cookies. One mold yields a length that can be cut into even pieces after baking. It can also be used to shape a narrow strip of bread dough or a small savory log, provided the mixture is firm enough to hold in an open trough.
Place the mold on a flat baking tray before it goes into the oven so it sits level. Do not overfill; the dough should stay below the rim. After baking, let the mold cool until it can be handled, then invert or lift the bar out. Slice only after the bake has set, or the cut edges will compress.
Wash by hand. Do not soak for long periods. Avoid metal scrapers on the coating. Dry the mold fully, including the inner corners. Store it on its side or nested with a cloth so the coating is not scratched by other tins.
