Birch Handle Stainless Scoring Knife with 5 Blades

This is a scoring tool for cutting the surface of proofed bread dough before it goes into the oven. The handle is birch. The stem is stainless steel and is slightly curved so the blade meets the dough at an angle. A clamp at the tip holds a standard double-edge blade. The set includes the handle, five spare blades, and a small pouch for used or spare blades.

Scoring controls how the loaf opens in the oven. A shallow, clean cut is easier to make with a thin blade than with a kitchen knife. The curved stem keeps your fingers off the dough. The wooden handle stays comfortable during a short series of cuts and does not feel as cold as a full-metal tool.

The handle measures 18.5 × 2.5 cm. The assembled tool weighs about 29 g. Because it is light, it is meant for dough scoring only, not for slicing baked bread or cutting food on a board.

Fit a new blade so that a short, even section is exposed. Tighten the clamp before use. Hold the lame at a low angle and draw it toward you in one motion. Replace the blade when the cut starts to drag. Used blades should go into the pouch, not into a drawer loose.

Keep the tool away from children. Do not leave a fitted blade in the handle when you store it. Wipe the stem dry after use so moisture does not sit against the wood. The birch handle can be wiped with a barely damp cloth. Do not put the lame in a dishwasher.
